Description
I won first place in a South Texas Culinary Arts bbq competition. It is a tangy vinegary sauce. It has a sweet taste with a spicy after thought.
I know it sounds like an odd recipe but it ended up being quite yummy.

Ingredients
- 1 onion thinly sliced
- 1 regular sized bottle of ketchup
- 2 sticks of butter
- 1 cup of light brown sugar
- 2 tbs Tabasco sauce
- 2 oz Worcestershire
- 2 oz Mustard
- 1 cup white distilled vinegar
- 2 oz red wine vinegar
- Dash of black pepper
- 1 tbs beef base

Procedure
In a sauteuse melt the 2 sticks of butter and caramelize the onion. While waiting for the onion to caramelize, mix all ingredients except the beef base. Once the onion is browned, pour half the sauce into the sauteuse and add the beef base. Let it reduce for a few minutes, then mix with the original mixture.

Notes
I had never made BBQ sauce before and this whole thing was winged (Since it was for a grade I had to compete). Most of the quantities are estimates; you should taste and adjust as desired.
